Here is my recipe using these delicious asparagus spears.I normally eat some right out of the can, they are so delicious.

ASPARAGUS CHEESE BITES

These tasty miniature quiches will put you in everyone's good
graces-especially if you surprise someone with breakfast in bed. Quiches retain heat, so cool five minutes before serving.

12 slices old-fashioned white bread
1/4 cup butter, softened
1 (15-ounce) can asparagus spears, drained and cut up
1 cup shredded medium cheddar cheese
2 cups fat-free milk (try 1 1/2 if the bread is very fresh)
4 large eggs
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper

1. Preheat the oven to 350*.

2. Stack the 4 slices of bread, use a sharp knife to trim the
crusts. Butter one side of each slice.

3. Set out a 12-cup muffin tin. Gently press the bread,
slices, buttered side down, into the muffin cups.

4. Top each slice with an equal amount of asparagus and
then sprinkle with cheese.

5. In a medium bowl, beat the milk, eggs, salt, nutmeg and
pepper until smooth; ladle into the filled bread cups. Bake
25-35 minutes or until egg is completely set.

Makes 12 little quiches
