Wonderful aged Gruyere,

We first enjoyed this variety at the Gruyere Castle in Switzerland. This is very similar to what I remember from those delicious samples. Much more personality than regular Gruyere, rich, with a delightful flavor "edge" that distinguishes it from many other varieties.
