The previous poster is wrong. I am a pastry chef. Creme Brulee is best when it is 1 inch thick or less. That gives you a better ratio of crunchy top to silky cream.
You do have to be careful not to drown your brulees getting them in and out of the water bath with these dishes, and I have had some trouble with chipping, but they work perfectly well for creme brulee.

These look like they would have fit the bill, but arrived chipped and broken. After second attempt, I have moved on to a department store.

I really liked these dishes. They worked great for Creme Brulee. However, my first order arrived with most of the dishes broken. That was very disappointing. I had to call and reorder the product and I had avery short period of time before the party where I needed to use them.

...for creme brulee or any other kind of custard.
I use them as nut dishes when I have company. Totally useless for anything else. |
