My Grandfather cured Hams, and I helped with the Brine and Smoking. So you can see that HAM was a big part of our dining when i was growing up. HAM, The new cookbook by Weinstein & Scarbrough is outstanding in every way. It has given me insights into preparing AND enjoying wonderful ham. Thank you both for giving us this treasure!. The story "bits" were somewhat ridiculous, and the recipes, I thought, were mediocre, in the book "Ham: An Obsession with the Hindquarter". It was not what I had expected from these two people!

Ham was pretty much a once a year affair for me. But I am a real fan of the authors' last book "Cooking Know-How" and had to see what the authors were up to with their newest food obsession. I was not disappointed. This is a feast of a book. More delicious recipes for ham than I could have imagined, punctuated by a hilarious narrative of the authors' adventures during their year of ham. Read it first and then cook from it. You will not be disappointed.

very unpleasent book: recipes around the word, yes, but rare recipies, a very little about how ham are prepared before using in a recipe. My expectation were much higher.
