My Grandfather cured Hams, and I helped with the Brine and Smoking. So you can see that HAM was a big part of our dining when i was growing up. HAM, The new cookbook by Weinstein & Scarbrough is outstanding in every way. It has given me insights into preparing AND enjoying wonderful ham. Thank you both for giving us this treasure!. The story "bits" were somewhat ridiculous, and the recipes, I thought, were mediocre, in the book "Ham: An Obsession with the Hindquarter". It was not what I had expected from these two people!

Ham was pretty much a once a year affair for me. But I am a real fan of the authors' last book "Cooking Know-How" and had to see what the authors were up to with their newest food obsession. I was not disappointed. This is a feast of a book. More delicious recipes for ham than I could have imagined, punctuated by a hilarious narrative of the authors' adventures during their year of ham. Read it first and then cook from it. You will not be disappointed.

An obsession with the hindquarter??!! C'mon there are a couple of stories about failed attempts to make ham and then a series of recipes using ham. I was hoping/expecting a book about the process of making ham. Pig breeds, age, weight, feeds,cures, smokes etc etc etc This is just a recipe book that might be useful if you have some left over ham at Xmas

I gave this as a gift to a good friend. Before I passed it along I read about 1/2 of the recipes to make sure it would be a good gift. Well I know I will buy this one for myself. It is a great book to have in the collection.

It a well made book and it's has some interesting reading subjects. But it's not really out of this world. Limited photos and the side bars are printed a little too small. Gotta get up close to read them..

A lot more than Ham here,

Yes, this is indeed an excellent and unique cookbook about Ham. Not only is the book "stuffed" with a huge variety of ham recipes, but there are the most amazing tidbits of cooking insights (called Tester's Notes in the book)along side of so many of these recipes. Loads of ham facts are laid out throughout the book. Interwoven between the chapters are very amusing vignettes allowing us to share the authors' most human experiences while getting to know their animal subject.
The book is beautifully "orchestrated", comfortable to hold and entirely visually entertaining. As an amateur in the kitchen, I find this book most enjoyable and workable - Not suprising from these talented authors who have written so many other great cookbooks.

very unpleasent book: recipes around the word, yes, but rare recipies, a very little about how ham are prepared before using in a recipe. My expectation were much higher.

Ham: An Obsession with the hindquarter by Bruce Weinstein and Mark Scarbrough is not just a culinary exploration of one the world's favorite meats, it's a real winner in terms of the recipes included. There have many single subject food/recipe books but none come anywhere near the depth of information, the great recipes and fun writing style. I'm thoroughly enjoying cooking and eating my way through the book. No home cook's kitchen is complete without this book. It's great.
