Hugot's Handbook of Cane Sugar Engineering needs little introduction - it can be found in technical libraries in cane sugar producing countries all over the world. Unique in the extent and thoroughness of its coverage, the book has for many years provided the only complete description of cane sugar manufacture, mills, diffusers, boilers and other factory machinery, calculation methods of capacity for every piece of equipment, and process and manufacturing techniques.

This new edition has been extensively revised. Information that has become obsolete or of little interest has been deleted or severely shortened. Detailed additions have been made to chapters dealing with recently developed equipment. An entirely new chapter has been added on automation and data processing. Numerous figures, graphs, drawings, photographs, tables and formulae are provided. The metric system has been used throughout the book, but because many factories still use the British units, all measures, formulae and tables and nearly all calculations have been given in both systems.

Review

...full of solid reliable information which has stood the test of time. Hugot's handbook is now a classic within the industry and this third edition will continue to be essential to the factory library.
Biomass
This handbook represents a tremendous undertaking... The book covers very completely all the equipment required in the factory producing raw cane sugar. Pumps and piping are not overlooked.... there is much of value to engineers and technologists in cane refineries or beet factories. A substantial portion of the book deals with the milling of cane. It would seem impossible to find any detail of this operation that has been overlooked... outstanding value for the sugar engineer. The book is more than worth the price.
Food Technology
A must for sugar industry libraries and for engineers and chemists wishing to keep up to date with the latest in sugar technology.

5.0 out of 5 stars THE BOOK for sugar industry, May 4, 2000
This review is from: Handbook of Cane Sugar Engineering, Third Edition (Sugar Series) (Hardcover)
This book, or should I say Encyclopedia, is the best book on the sugar industry ever written. It describes in detail each and every part of a Sugar industry, with useful information and guide to designers and constructers. Ther is no doubt to it, every person in the industry uses it. Both the english and French versions are the most complete literature that one may expect. But the price is still too high to be available to engineers and technicians.

It is useful to both the one working in a sugar factory and the one who designs and constructs the apparatus.

One point that may be added for futur editions is a small chapter on structural steel work that exist in a sugar factory, which constitute an important % of the investment.

5.0 out of 5 stars Too good but too high!, October 17, 2000
By A Customer
This review is from: Handbook of Cane Sugar Engineering, Third Edition (Sugar Series) (Hardcover)
Actually, I don't own one but our ISO 9000 group has one, second edition. The contents are interesting and realistic in nature. Since I am documenting procedures for our ISO certification, I wish I could have one for my own reference but the price is too high. Perhaps you can come up with a photocopied version at a lower price for us technical people to have one. This book will be of great help in our company's drive for ISO 9000 certification! Thanks a lot!
