I was born and raised in Maui, and grew up on kalua pig and poi. Let me tell you, if you make this in your crock pot, it will melt in your mouth. Better yet, if you know someone that can mail you some banana leaves to add to your mix, it tastes even better. More authentic. Anyway, this kit is excellent, but you can get the Hawaiian salt on other Hawaiian web sites that sell Hawaiian salt. As for the liquid smoke, you can get that a a local market. So don't think you can't still have this at home when this site is out of their product. Also, just so you know, you can use regular table salt, and it's all good! I have made it that way, and you can't tell the difference. Just monitor your salt, because once it's in there, you can't get it out. It tastes even better with poi. Just dip a piece of meat in the poi, and how ono (Hawaiian word for 'good') is that?

Be careful not to rub to much salt and follow the instructions it will melt in your mouth
