Athletes and other physically active people cannot readily pursue a vegetarian regimen because so many current vegetarian cookbooks focus on simply keeping meats out of the diet and too many vegetarian diets lack the food energy sources required for intense competition. Kleiner and Friedman-Kester set out to restore high energy levels to vegetarian diets with their full-flavored recipes that draw on a broad spectrum of nonmeat foods to ensure that active people miss no essential nutrients. The book teems with nutritional advice, particularly when dealing with sources for newly important minerals, such as zinc, normally found usefully and abundantly only in meat products. Some of the authors' recipes are predictable; others, especially those for breads, muffins, and other baked goods, may be attractive even to nonvegetarians. Mark Knoblauch
