Minestrone



Serves 6 ~ Preparation time: 25 minutes ~ Cook time: Approximately 7 hrs and 30 mins

Ingredients:
  • 1 1/2 cups of chickpeas, cooked
  • 1 cup of zucchini, cubed
  • 1 cup of carrots, cubed
  • 1 1/2 cups of tomato, finely chopped
  • 1/2 cup of celery, diced
  • 1 cup of potato, cubed
  • 1 cup of lean ham, cubed
  • 1 cup of elbow macaroni, cooked
  • 4 cups of chicken or vegetable broth
  • 1/2 cup of onion, finely chopped
  • 3 garlic cloves, minced
  • 2 Tablespoons of olive oil
  • 2-3 sprigs of fresh parsley
  • 1/2 teaspoon of black pepper
  • 4 Tablespoons of parmesan cheese
Directions:
  1. Heat one tablespoon of olive oil in a large skillet over medium heat.  Add the
    onion, garlic and saute and cook for 2 to 3 minutes
  2. Add the carrots and celery; cook for 5 minutes
  3. Remove the pan from heat and transfer the vegetables to the slow cooker
  4. Add the ham, chickpeas, potato, parsley and the remaining vegetables to the
    slow cooker, season with black pepper and stir to combine
  5. Pour over the reaming olive oil and broth (you can add a little water if broth doesn't cover the vegetables).
  6. Cover lid and cook on high for approximately 1 hr 30 minutes
  7. Switch to low and cook for another 5 hrs 30 minutes
  8. Add the macaroni to the slow cooker and cook on low for another 30 minutes
  9. Check for salt and pepper
  10. Top each bowl of minestrone with grated parmesan cheese

Creamy Chicken & Mushrooms Stew



Serves 4 ~ Preparation time: 25 minutes ~ Cook time: Approximately 5 hrs and 15 minutes

Ingredients:
  • 1 lb. of chicken breasts, cut into 1-inch cubes
  • 1/4 cup of onion, finely chopped
  • 1 garlic clove, minced
  • 1 1/2 cups of fresh, firm mushrooms, chopped
  • 1 Tablespoon, of cornstarch
  • 1 Tablespoons of olive oil
  • 2 Tablespoons of water
  • 1 cup of whole milk
  • 1 sprig of fresh parsley
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of ground cumin
  • 1/4 teaspoon of ground coriander
  • 1/2 teaspoon of salt
Directions:
  1. Heat the oil in a large skillet over medium heat the saute the meat for 10 minutes
  2. remove from heat and transfer to the slow cooker
  3. Stir in the onion, garlic, mushrooms, parsley and seasonings
  4. Cover lid and cook on medium for 4 hrs 30 minutes
  5. Dissolve the cornstarch in water and stir in to the milk
  6. Pour over meat and mushrooms in the slow cooker
  7. Cover and cook for another 45 minutes or until the meat is fully cooked
  8. Serve it with a warm rice salad

I have only had this book about a week and already I have made two of the recipes. I plan to make almost all of the recipes in the book. They all look easy and include ingredients that are readily found. I absolutely loved the Sweet Potato and Chicken Stew. I have many slow cooker cookbooks but I am pretty sure this will be my "go to" book for any type of recipe. Am looking forward to working my way thru the rest of the book.

One thing that I love about the recipes in this cook book is that they are low in calories. In that way, I can enjoy eating sumptuous and delicious meals without worrying about my weight. I alternately prepare the dishes enclosed in this cook book so that I can try out all of them. So far, I have tried cooking 8 different recipes and they are all very tasty. And surprisingly, they are also very easy to prepare!

I am officially in love with slow cooking, thanks to this recipe book! Who can ever resist the 33 different crock pot dishes included in this book? They are all so healthy and delish that preparing them makes my mouth water each time. The step-by-step instruction is very helpful in making each cooking venture successful for me. Plus, it helps save so much time! I can start preparing the dish in the morning and just leave it to cook in time for dinner.
