I was thinking that "at Home" and the book's description indicated that the recipes in this book would be an easier version of some great "cuisine". However, several of the recipes refer to other recipes in the book that need to be made first or have on hand. I have time to PREP, not MAKE ingredients before actually making a meal. I found many of the recipes, directions and equipment requested not for the average "at Home" cook (i.e. Mom with a thousand other things to do).

However, if cooking is your hobby and you want to be a step above "at Home" cook, this could be the book for you. Or, if you want to learn some new techniques or find definitions for how to do something, it does have fantastic informational sections. (Hence any stars at all!)

Honestly didn't do enough of the recipes to comment on them as I only found a few that could be done given my time, budget and desire. Many look delicious in the ingredient list but then the directions want something I don't have or can't substitute. Not a book for everyone, but definitely has a niche . . with someone . . somewhere.

Leave it to the experts at the Culinary Institute of America to put together a cookbook about Healthy Cooking at Home that's not only fun to read but also educational.

Healthy Cooking is nicely illustrated with color photos although most of the recipes are of the detailed kind rather than quick and easy. We especially like the extensive section about fresh fruits and vegetables, sure to inspire readers to head off to their nearest farmer's market to purchase items they may have previously been unfamiliar with. And the soup section is perfect for year-round make-ahead dishes offering both classics such as fresh corn chowders and more offbeat entrys like Sweet Onion-Radish Soup and Curried Apple-Squash Soup.

For the burning answers to how to make pizza healthier and is chocolate healthy, Healthy Cooking at Home from the CIA offers the best educated response and much more.

The Culinary Institute of America is the top school for chefs in the United States. Here one does not focus just on family recipes you might find on the internet and in other cookbooks--the art and the science of food and flavors and the combination of what works all play a part.

But, for the home chef, it may not be what one would expect in the normal cookbook.

Until now.

I gained my own cooking skills at the CIA but a chef never stops growing and I collect cookbooks like a library collects what comes out new that season...I just can't stop myself. This one is a real treasure for me because I love to stay healthy but I desire to eat gourmet. I tweak pretty much every single recipe I make--whether from a cookbook or the internet--to add flavors and textures and spices I think will improve it. This is actually the only time since I can remember that I began cooking recipe after recipe without having to "doctor" the flavors in anyway.

In here the flavor combinations will wow--balances of things like acidity and sweetness combined with the perfect spices and married together in a way that is stunning when plated.

I use it simply to treat myself even when I am simply making a meal for myself on some nights...because it is a treat to feel like you are at the best restaurant but you can relax in your pajamas and savor.

Sure you could entertain with it as well, it's that good, but why wait until then?

This is done right...you have regular "home cook" measurements like cups, but right next to that measurement you'll see the WEIGHT, which is the only way to get true accuracy in cooking. (8 oz is not always a cup...a cup is for measuring fluid ounces but in America we reach a bit by forgetting weights and a cup of pasta is never 8oz. for example.)

I loved recipe after recipe.
