The Healthy Cuisine of India is a GREAT cookbook. I LOVE the recipes in this book. This is my first and only Indian cookbook so I can't really compare it to other Indian cookbooks. But I do know that I enjoy the food from these recipes even more than eating out at Indian restaurants. The author gives lots of details explaining the different types of spices and how to prepare them. There is also some discussion of the lore associated with the various recipes. And the food tastes GREAT. Highly recommended.

Despite the fact that this book has no illustrations, I really like it. It probably won't appeal to a very broad range of people as it focuses only on the cuisine of Bengal, a smallish state in India's north-eastern corner. As such, there are very few dishes that many people in the west will recognize; indeed, the only dish I came across that one commonly finds in Indian cookery books is the 'Murgi Do-pyaza' on page 189. Advanced cooks with a deep interest in Indian cuisine will enjoy the book, though. There is a great range of excellent recipes and some interesting introductory material on the spirit of Bengal cookery with it's special love for mustard, mustard oil, and the characteristic spice blend known as 'Panch Phoron'. I should add that, though the book specifically refers to the healthiness of Bengal cuisine in the title, there is only a brief mention of this at the beginning and not much thereafter. That, however, did not diminish my enjoyment of it whatsoever.

My partner got this book for me and I use it all the time. The recipes are thorough and easy to follow but the best part is eating the wonderful food! I would highly recommend it to anyone, beginner or expert, there is so much to be learned from this book.
