About the Author

Karen Ansel, MS, RD, CDN, is a journalist, consultant, and author specializing in nutrition, health, and wellness. She is a spokesperson for the American Dietetic Association and a contributing editor for Woman’s Day magazine. She is the co-author of The Baby & Toddler Cookbook and her work has been published in national magazines including Cooking Light, Eating Well, Prevention, Fitness, Women’s Health, Woman’s Day, and O, The Oprah Magazine. She lives in Long Island, New York with her husband and two daughters.

Charity Ferreira is a food writer, recipe developer, and senior editor at Yoga Journal. She is the author or co-author of numerous cookbooks, including Williams-Sonoma Eat Well and Essentials of Mediterranean Cooking, and The Baby & Toddler Cookbook. Her writing has appeared in publications including Cooking Light, Gourmet, Bon Appetit, Sunset, and San Francisco Magazine. I have been trying to find recipes lately that I could make for my family that are healthier and do not take a lot of time. I thought this book would be perfect for me to try out. I was really impressed with the beautiful pictures that were in the book that showed each recipe, I was hungry just looking through it.

The book begins with a discussion about how to eat healthier and gives a great list of superfoods, tips for buying them, and how to store them. The book then gives recipes in different sections. Here is a list of some of the recipes that I thought sounded great:

Pumpkin waffles with orange and cinnamon
Broccoli-cheddar soup with sourdough rye croutons
Fresh tomato and basil pasta
Pan-steamed Asian greens
Dark chocolate oatmeal bars

Though I did find some good recipes, this book really wasn't for me. I couldn't find any recipes that my kids would eat at all and none of it looked very filling. This is not a bad cookbook, it just didn't fit my needs of feeding a big hungry family.

This book is awesome! I highly recommend it for anyone trying to eat healthy and wants good meals with out a lot of fuss. I also bought one for my mom and my sister. It also has a chart inside as when to buy fruit and veggies in season.

There never seems to be enough time in the day to do everything that we want to do and that can include making good, healthy and tasty food. It is often just too easy to fetch take-out, to heat up processed food or just rely on quick and easy-to-make meals.

Healthy in a Hurry sets out to show how you can eat well and healthily without it taking a large chunk out of your pressed timetable. What is more, you need not feel that you are "imprisoned" in a health farm either. There is a variety of choice on offer. Not just basic meals either!

Split into typical meal times (breakfast, snacks, lunch and so on) the book first looks at various motivational and practical reasons for eating healthily and considers some so-called "superfoods" and other health-positive ingredients. Throughout and mixed in with the recipes are many suggestions for efficient time management that can possibly further the reader towards their goals. The book's design is quite informal and friendly, drawing the reader in through its inspirational and aspirational text. It does not read as a staid lecture or high-level academic tome so youe can easily dip a toe in the water and maybe try a few recipes and - presumably - become convinced of the benefits and explore further.

When you consider the range of the meals being promoted it is quite pleasing, showing that you can enjoy much variety and change whilst following a central theme of healthiness. The text gives, in part, reasoning for some of the recipe selections so that you may gain further knowledge and confidence to adapt what has been learned with other recipes and ingredients.

This book read my mind. With a young child at home, I'm forever thinking about ways to prepare healthy meals that she'll be happy to eat without just having the same things over and over. I always try to make healthy food, but sometimes I'm pretty low on inspiration. This book makes healthy eating accessible (I might even consider buying quinoa, whatever that is). It even has some helpful menu plans. Plus, it's divided into sections called "Breakfast," "Lunch," and "Dinner" so it's easy to find ideas in a hurry (oh hey, just like the title!).

I got this review ebook from NetGalley, and I've enjoyed selecting recipes from it. Ansel's gotten together some really beautiful photographs of healthy food, as well as a list of "superfoods" to add to your diet. With instruction on how to select, buy, cook, prep, store, and use fruits, veggies, and grains, it's a good introduction to healthy eating for the interested good. Most of the ingredients can be found in any American store; you'll find some beautiful things you wish you could cook for a large crowd!
