Many of these foods are rich in vitamins and minerals, but are also rich or high in total fat, saturated fat, cholesterol and sodium (salt).

About the Author

Cheryl Campbell Atkinson PhD, RD., LDN.Received her B.S. in Food Science and Management from Pratt Institute in Brooklyn New York, her M.P.H. in Nutrition from Tulane University in New Orleans, Louisiana and her Ph.D. in International Nutrition from Cornell University. She is a registered dietitian (RD) and a licensed dietitian/nutritionist (LDN), and a member of both the American Dietetic Association and the American Association of Family and Consumer Sciences. She has worked in private practice as a clinical dietitian in Baltimore, Maryland and New Orleans, Louisiana, and is presently a faculty member at Southern University A&M College, Baton Rouge, Louisiana.
