Healthy Mexican Cookbook offers big flavor with little fat, February 1, 1999

Having owned this cookbook for over four years, I've had the opportunity to sample several of its recipes. Nothing has been disappointing. I think one of the first ones I tried was the Salsa Chicken. This recipe has become a standard chicken breast recipe in my house. The salsa chicken, like most of the recipes I've prepared from this book, tastes like something which should be bad for you. This is the true test for healthy food. If you can tell something is heart-healthy when you bite into it, It loses its luster fast. Jacqueline's recipes offer substantial, satisfying flavor. The fact that it is good for you is an added bonus. Try the White Bean Chili. It is spectacular.
At times there are some ingredients which may be difficult to obtain for us commoners (such as the different dried peppers, for example). Healthy Mexican Cookbook redeems itself in content, however, making the search for these unusual ingredients well worth it.
