Bindi Wetzel's Healthy Vegetarian Collection: More Than 100 Healthy Recipes for a Vegetarian Diet begins with a well researched discussion of vegetarianism, what a vegetarian diet is, the diverse reasons people choose to pursue a vegetarian lifestyle, the varieties of diets that fall under the general rubric "vegetarianism" (vegan, lacto-ovo, at al), etc. The 100 recipes that follow are divided by meal - Breakfasts, Lunches, Dinners, Appetizers and Desserts. The author is, herself, vegetarian, and was raised in a vegetarian household (I'm guessing right here in the USA), and it shows in the very tasty recipes given in all categories that are very much geared, to my mind, toward a down home American palate. Many of the breakfasts focus on one variation or another of "veggie bacon and eggs," which you gotta admit, as an American, is likely to be a favorite for many (it is mine, for sure). My favorite so far in this category is the "Potato Frittata," featuring eggs, potatoes, asparagus and shredded cheddar - yum! Lunch recipes include American favorites like potato salad, veggie-bobs on the grill, pizza, veggie lasagna, coleslaw, fried green tomatoes, pasta salad, corn salad with peppers, eggplant Parmesan, grilled cheese (with apples), chili, stuffed peppers and more. Dinners include eggplant lasagna, pepper soup, Mexican fritters, slow cooker spinach casserole (with eggs and plenty of ricotta), veggie burgers "with a kick," more pizza, tacos, stir-fry, pot pies, quesadillas, "vegetarian steak"(made with tofu), Italian ziti, and yet still more... For vegetarians with a taste for American cuisine, this book is ideal.

I am a vegetarian always in search of new, delicious recipes, so I was in food heaven as I read this book. There are over 4000 pages of healthy and delicious breakfast, lunch, dinner, dessert and appetizer recipes, explanations of vegetarianism, and more. At the price this book is being sold at even if you are not a vegetarian you can use the recipes in this book to create healthy scrumptious meals for yourself and your family. I assure you when you do they will not miss the meat at all! And of course if you are a vegetarian Healthy Vegetarian Collection: More Than 100 Healthy Recipes for a Vegetarian Diet will provide you will an abundance of savory vegetarian recipes that will solidify your choosing the vegetarian lifestyle.

As a longtime vegetarian, I am always looking for good, interesting recipes.

While I would have preferred color pictures for every recipe, I was very impressed with the wide range of ingredients and recipes used in this collection.

I'm also thrilled that the author also included a number of recipes that were chocolate-flavored!

Not only does Bindi include many recipes, but she also has information about grocery lists, ingredients, cooking, and taking small steps to becoming a vegetarian (or vegan).

I highly recommend this collection and plan to try some of these for an upcoming party.

This book is ok I think it needs some good editing though. Recipes say to use bacon I am hoping she means vegan bacon this isn't clear in many of the recipes. I am also a bit take aback by the use of so much sugar and white flour as that is not very healthy but at least it is sugar and not using some of the more dangerous sugar substitutes. The recipes are easy and if you use vegan bacon and vegan sausages instead of real meat sausages (not specified in many of the recipes) you will learn how to cook a good vegetarian meal. I think if this book was edited and revised just a tad it would be much better.

With a background in nursing, I understand the importance of eating more naturally. What I appreciate about this book is that it includes recipes for all times of the day and as well as snack type foods. Also, the recipes are not so extreme that you cannot use any eggs, milk, sugar or butter. Yet, it is explained how to remove ingredients and replace with other options if you prefer. I look forward to the benefits of eating a more vegetable and fruit centered diet and can't wait try the veggie burgers, granola and quesadilla recipes! As the author suggests, I will have fun with it!

I cannot wait to try most of the recipes in this cookbook! I am not a vegetarian but I love love love veggies and upon retirement in two years I will be trying to live off my vegetable garden as much as possible. Therefore, I need some fresh ideas for cooking them, along with tried and true ones of my own....also I am growing some veggies that I am less familiar with as far as recipes. This book looks like it is going to be an awesome asset to my retirement meal plans...delicious, quick and easy!

There are good recipes in this book, you will find something to please your palate !
By the way this is a VEGETARIAN recipe book, not a VEGAN one. Vegetarians use milk, eggs, cheese, so those are allowed here.
My favorites so far...Pumpkin Bread, Potato and Asp. Frittata, Broccoli Soup, Tortilla Casserole, Veggie Pate, and Stuffed Peppers. Enjoy!
