A 12-inch chef's knife is the largest made, suitable for professional chefs and serious cooks with good knife skills. Its curved, stainless-steel blade is perfect for rocking through chopping and mincing tasks; as a kitchen workhorse, the knife is also useful for cutting and slicing. Classic three-rivet handles distinguish Pro S from the company's other quality lines: TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The Pro S line also has handles that are smaller; however, the line's steel is identical to that used in the Five and Four Star lines. High-tech welding of larger knives combines three steel types into what appears to be a single piece, so this knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. --Fred Brack

I'm picky! When I cook, nothing but the best will do. This is the best! Visitors to my kitchen are amazed at the size of this knife; until, I get it in their hands. It's balance is the best I've ever experienced. It is a joy! A must have for any cook.

Great knife. I own stainless sets of Pro-S, Grand Prix and Grand Chef. My favorite for the road is Grand Prix, because the knives are light, but my favorite set for everyday use at home is the Pro-S. This particular knife is as big as anyone could want for use in a kitchen. Great feel, balance and "rock," assuming you like the "shove-forward" type of chopping. Use a good steel, like the F. Dick, to keep it sharp, and this knife will last for 3-4 generations.
