Cooks with small hands find this version of the classic French chef's knife fits. It has a pronounced curved cutting edge for rocking through a chopping task. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines, TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of knives this size and larger combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. Very nice knife. Well balanced knife, although I the handle is quite a bit longer than I would have liked. The handle is actually longer than the handle on my 8" Trident Chef's knife. The length is great for quick tasks where a longer chef's knife is just too cumbersome. The edge keeps quite well.

What makes the Wide Chef's Knife different is the sharp slope from the tip to the bolster -- and that's also what makes it work so well for chopping or mincing veggies.

Hold the tip down on the chopping block with one finger, and quickly rock the handle up and down. Before you know it, your onions, garlic, parsely, whatever, are as finely chopped as you could want them.

Even better, the weight is balanced slightly forward of your grip, so the knife naturally moves right into the job. Less effort, less time, less hassle.

Seriously, this may become the most-used knife in our kitchen.

The short blade is perfect for my fiance -- her hands are much smaller than mine. And the way the wide blade sharply (no pun intended) angles up to the point make this kinfe absolutely perfect for all those mincing jobs.

Oh, and in typical Henckels fasion, the blade is weighted forward of the tang, so it naturally moves into the food as you slice, making your job that much easier.

Pair this with Henckles 7-inch Santuko blade, and you have a great starter set for any kitchen.
