This knife's thin, 8-inch blade makes any fine-slicing job a breeze, and it handles most big carving jobs easily. High-tech blade edges distinguish TwinStar Plus knives from Henckels' other quality lines. Hard metal particles coat one side of the edge, which requires no sharpening if used correctly. Distinctive handles shaped like gentle waves fit the hand snugly, though cooks with small hands might find them too thick and too long. Their partial tang makes TwinStar Plus knives a bit more weight-forward than those in Henckels' Pro S line. High-tech welding combines three steel types into what appears to be a single piece, so each part of the knife has distinct characteristics: traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are stronger than the steel. While this knife is dishwasher-safe, hand washing is recommended. --Fred Brack

I am used to using the "Professional S" series of kinves from Henckels, so this was a but of a venture away from my comfort zone. The price was right (approx. $40 special on Amazon), so I went ahead with the purchase. I have found the knife to be extremely sharp and am happy so far with its performance.
