I really love this knife, especially the handle. It form fits into my palm and has a decent satisfying heft to it that some of my larger chef's knives just don't have. When I'm looking for a knife, I'm looking for this one every time. It's also managed to keep a good edge for quite a long time. I think you'll be happy if you buy this one, and if you're like me, you may even want to replace all of your knives with this line. Can't recommend it highly enough.
I have older (1996) Henckels Twin Star knives. They were the first knives to feature the one size ergonomic handle regardless of blade length. Awesome handle, but these knives also featured ceramic coated blades that do not need sharpening. They were the best knives at the time of purchasing and also wildly expensive. After 12 years of commercial/home use these knives are still sharp but I still don't like them...nobody does and that's why they don't make them anymore. But the handle was amazing and is still used in top of the line Henckels knives.
The Twin Cuisine line is the best knife by Henckels except for the Twin Select which is basically the same (same price) except for a complete stainless handle, and the Twin Cermax which is a special Iron Chef edition that is for the Rich chefs with rich pockets. I'm talking $250/knife here. It's the Rolls Royce Limited Edition of knives...nobody will be buying these.
My paring knife tip broke off because the ceramic made the paring knives brittle. So Henckels replaced it with a Twin Cuisine. Henckels has awesome warranty for life should you ever require it. It's good to see the ergonomic handle on a top of the line knife with a regular edge that can be steeled on a daily basis. The prices are also reasonable on a knife of this quality compared to 10 years ago.
For the serious home chef or professional cook I'd definitely recommend these. It's the type of knife that could be in your family for 100's of years. There are other quality knives from companies like Trident, Global, etc... but I have experience with Henckels and their lifetime warranty is hassle free. I would not hesitate to recommend anything from the Twin Cuisine or Twin Select line.
Fun Facts. Henckels knives from Solingen Germany will say Zwilling on them and have the 2 man logo on them. This means they are the professional line. The ones you see in department stores and such are not marked Zwilling and only have the 1 man logo. They are the value lines not designed for restaurants. I have also worked with many top chefs and many of them prefer Trident knives. Do not be scared to order another brand..I do however highly love and recommend these with the ergo handle.
This is a great knife, after trying many paring knives I chose this one. I love the way it has a full size handle, most of my knives are from Shun but their paring knives have handles that are too small and uncomfortable to me, whereas in this series the handles are all nearly the same size.
Also this knife has considerable heft for a paring knife, all of the knives in the twin cuisine series are quite heavy, with much of the weight stemming from the full tang handle. In the case of the paring knife I think this is great, but I think it throws off the balance of some of the larger knives such as the chefs knife and santoku of this series. But of course knife preference is very subjective so I would recommend feeling and trying them out in person.
