I've had one of these boning knives for five years now. It's the knife that I reach for first. I use it to skin & debone wild boar & deer as well as chicken and turkey in the kitchen. Holds an edge quite well & sharpens easily. A little heavier than others but a well balanced feel. Also a little stiff but I always know where the tip is & what it is doing. I like a straight rather than a curved blade. A plus is that it is forged and not stamped. I just ordered two more so I always have one handy.

This line from Henkles has proven to have been made from poor quality stainless. I've been a long time user of the Professional S series from them and had no problems. I recently got this set for my kitchen and in less than 8 months the knives have started showing rust spots. I wouldn't advise anyone to buy this line of knives.

I have always had good experiences with Henckels knives, and these are no exception. Although on the cheap end as far as knives go, they are good quality knives, and feel very solid. I love the balance as well, the handles are really well built and easy to grip even if your hands are slippery, and I have fairly large hands and I love the way these feel in the hand. It holds an edge very well too, a big plus.

When I was younger and worked as chef in restaurants I often had great boners. Cooking at home with my wife , away from kitchen helpers the quality of my boners was not nearly as good. I am very happy with the quality of this boner and would reccomend it highly for home chefs .

Nothing worse than using inappropriate tools for the job. This is the 4th J. A, Henckels knife that our family has purchased. Although not their top line imported from Germany cutlery, made to the same standards in Asia. Sharpened with the proper coarse/fine pull-through tool, the knife cuts cleanly and holds a sharp edge through a lot of use. Very happy with this product.
