The ultimate in well-designed poultry shears, these balanced, powerful, 10-inch shears have curved, high-carbon, stainless-steel blades for cutting apart poultry. One blade is notched to cut through bones easily and serrated to prevent slippage. Handles are made of tough polypropylene and curved to fit the hand snugly so that maximum force can be exerted with minimal effort. For storage, the handles lock by simply pushing a red slide at the blades' base with the thumb. The sturdy barrel spring between the blades ensures the blades move precisely. The biggest problem is the coil/spring is NOT stainless-steel so the inside of it rusts, even if you take it apart for each washing.

After a few uses, the spring went bad and the blades wouldn't close.

The first use wasn't too bad. It cut things well but the lock locks too easily, without something even touching it, so it had to be unlocked multiple times during use. Safety is nice,but that is just annoying.

The biggest problem is the coil/spring is NOT stainless-steel so the inside of it rusts, even if you take it apart for each washing. Once it gets rusty it becomes very very difficult to close the shears, making cutting a real pain, literally. I soak the spring regularly in rust remover but I can not use it for more than a single piece now without horrible aches in my hand.

My prior shears lasted for 10 years, but these I need to replace after a couple of months...

Anyone with any rust issues should contact Henckels from their website and get a replacement. The blades are guaranteed to be rust free. Don't mention the rusty spring issue or they'll only send a replacement spring.

I gave these 2 stars because they worked nice for the first couple of months, even cut through chicken bones. But just like the other reviews, the spring rusted terribly and the spring tends to pop off too easily at the most inconvenient moment. I used these for making chicken soup alot, but noticed that it also doesn't always come clean between the blades and when using on chicken I like to be extra careful. So the next set I get I'll look for a set where the blades unhinge to make sure they come clean and not from Henckels this time.

Bought these shears, and was quite dissappointed.The spring rusted and after a few use, the lock (red knob) on the side came out.
The blades are durable but the overall handling is too cumbersome.
The price is also not too good.Many better choices are avilable at lower price ranges.

Shears are a simple tool. All they have to do is open and close. And yet, thanks to the spring mechanism, these particular shears are problematic. First and foremost, the spring will rust and seize up, which leads to stiffness in the mechanism. Next, the locking mechanism will either be too hard to engage (and sometimes unlock), or too easy (locking while cutting). Finally, the plastic nubs that secure the metal spring are weak and will break. These shears lasted a year or two for me being used several times per week. I guess that's not too bad... except my mother has kitchen shears that she bought 15 years ago, and they're just as good as the day they were purchased. These degraded over time and became a frustration to work with. Avoid these like the plague. There are many better options here on Amazon, and most of them are cheaper as well.

These cut great if you have big strong hands. I have small hands and arthritis and the handles are so big they are really hard to get a good hold on them. The button that locks them is difficult to lock and unlock. The spring rusts and each time I want to use them I have to open and close them several times to get them to loosen up so they can be used without them sticking. Very disappointed Henckels put out something so horrible. Don't waste your money on these.

One of the best products I've ever bought. These things will really cut through those bones. This is my second set...NOT because there was anything wrong with old set but a year ago I broke my ankle and had had to wear a cast for six weeks. \

One night, the night before I was to have it removed, The cast had become so painful as it had started rubbing my skin to where there was bleeding and an infection underneath and had become so unbearable that I used my first set to cut through the cast. to cut away enough to give me some relief just to get to sleep. Amazing! The doctors usually use a power saw device to cut through, but this one did the job, albeit It did dull it up enough that even tring to sharpen it, it wasn't quite the same. That's why I had to get another.

Prior to my cast removal, these had served me well for several years even without sharpening.

You'll be happy you bought these.
