With a flexible blade that bends around big bones and joints, this knife will fillet a trout but works best with poultry and meats. Henckels' International Traditional is a moderately priced cutlery line made in countries other than the company's home of Germany. The steel is of lesser quality than that used in its premier lines. Also, the handles are narrower and shallower--a feature those with small hands might appreciate. While this boning knife is dishwasher-safe, hand washing is recommended. --Fred Brack

This is a great boning knife. It's very flexible so it makes it easier to go around bones of chicken and meat, also works great to fillet a fish. It's not at all heavy, so your hand doesn't get tired after a while. It's also a great price. If you're looking to buy a boninge, knife, this is the one.
