These are not Henckels' best poultry shears: the spring is not as big and sturdy as that of its heavy nickel-plated model, nor do the blades open as wide. Still, with their upward-curving blades--one notched to fit around bones, the other serrated to prevent slippage--these shears will dismantle any poultry, either before or after cooking. An adjustable screw securing the blades allows them to be taken apart for resharpening. Hand washing is recommended. --Fred Brack
