Distinguished by 18/10 stainless-steel, satin-finish handles, Twin Select knives embody Henckels's world-renowned craftsmanship. Henckels uses a high-tech welding process to form the knives in its first-rate cutlery lines. This process combines three types of high-carbon stainless steel into a single piece so that each part of a knife--blade, bolster, and tang--performs optimally. This 7-inch santoku is a Japanese chef's knife, a low-tip style with a broad blade. The cutting edge is less curved so the santoku provides less rocking action than a European-style chef's knife, but for straight-down slicing and precise chopping it's superb. Shaped like a gentle wave to fit the hand snugly, the ergonomically designed handle contains a full rat-tail tang and is fully watertight with no gaps. I shopped for months because I hate to spend big bucks on things that are likely to get dropped, mangled, or otherwise misused (big family). Picked this knife because the handle let me rock & chop without striking my knuckles. Probably the other Twin handles would perform just as well in that regard, but I've come to love the whole-silver look, and bought a fillet knife as well. At first I wanted a hollow-edge, but at the time none were available, so I settled for the plain - haven't noticed much difference with food sticking, and haven't regretted 'settling' - though when I add a smaller chef's or santoku I'll look for the hollow edge just to have the different blade. Excellent knife - and got it at a great price because I scavenged.

Attractive appearance. Perfectly sharp out of the box. My one complaint is that it does not come with a plastic sleeve to protect both the blade and the person opening the box.

Be it chicken or some other meat product, nothing chops better than this Santoku cleaver. I love it - very handy to have.
