I have used the same three Henckels knives for the past 10 years--a paring knife, a utility knife, and a carving knife in the Pro series--and I have been very happy with all of them. After seeing the Twin Select knives, I decided to get the 8-inch chef's knife to add to my collection. This knife is perfect for chopping and slicing. It has a nice wide blade that is nice for larger vegetables like carrots. The knife is heavier that any of my other knives but not so heavy to make using it a chore. The blade has stayed extremely sharp and the handle is contoured nicely and feels good in my hand when using the knife. My only complaint is that the handle is a bit slippery if you get it wet. Overall I would recommend it to anyone who does a lot of cooking, it makes an excellent addition to any knife collection.

Outstanding Chef Knife,

My wife has a touch of rheumatoid arthritis in her hands, and this is the most comfortable chef's knife she has found. It is nicely contoured, well-weighted, and very sharp.
That said, this is an expensive knife - you can find knives that are ALMOST as good for much less. Therefore, I rated this product 4 stars instead of five because I consider overall value to be "good" instead of "excellent". But if that extra bit of quality is worth a LOT of extra money to you - as it was with us - you'll likely be very happy with this knife.

I bought this knife after realizing that my bachelor-days knife set wasn't really cutting it anymore - literally. This is a very nice knife, and will stay sharp if you hone it fairly frequently (I've read that you should do it every time you use the knife, but I do so every few weeks). Just be careful to wash this after using it - if you leave it in the sink it will get rusts spots. That's the downside of high carbon knives, but it's worth that hassle for a blade that keeps its edge longer.
Now that I'm convinced of the importance of good kitchen knives, my next purchase will probably be either a set of Henckels or a new block and some individual Henckels knives to fill it. FYI though, the "international" line isn't made in the same factory as the higher priced versions, so do your research before buying for the brand name. |
