Hutson tells readers both how to grow and how to cook with herbs. She's particularly helpful with less-known herbs, such as marigold mint. After discussing propagation, pests, etc., she follows with recipes such as grilled catfish with smoked peppers and marigold mint. Special sections deal with Mexican and Oriental herbs such as epazote, hoja santa, and makrut. Her emphasis is on 20 herbs that will flourish in the South and Southwest, and the recipes are vigorously flavorful. Recommended. SP
