Osteoporosis may be prevented by increasing calcium intake early in life. In fact, for those already diagnosed, the symptoms of the condition can be eased with the addition of more calcium to the diet. A delicious way to begin the process is by using this cookbook which presents 250 kitchen-tested recipes high in calcium, low in cholesterol, fat, sodium, and calories, and made without sugar. Each recipe has been analyzed and approved by a registered dietician. Nutritious foods such as tofu, salmon, sardines, kale, figs, dandelion greens, sesame seeds, and black beans are found here in delectable dishes from soup to dessert and beverages. Recipes include: Cream of Mushroom Soup, Lamb Kebobs in Spinach Sauce, Hungarian Kohlrabi, and Buttermilk Blueberry Bake. Tips are given on cooking techniques and balanced meal planning.

Fardon (Osteoporosis makes a lucid case for solving calcium deficiency through diet rather than supplements, which can prove harmful or ineffective. Tasty and mostly uncomplicated, Marks's (coauthor of The International Menu Diabetic Cookbook recipes are high in calcium but not in fats, calories or cholesterol. In addition to skim and evaporated skim milk, nonfat dry milk, low-fat cottage cheese and yogurt, she creatively incorporates such lesser known high-calcium alternatives as cornbread, sesame seeds, tofu, figs, dandelion greens, sardines and salmon into a variety of appetizers, entrees and desserts. There are recipes and mail-order information for less familiar items like seaweed. Calcium requirements for children, and pregnant and nursing women, as well as substitutes for those who suffer lactose intolerance are provided. Recipes include a breakdown of calcium, fat, cholesterol, carbohydrate, protein and calories per serving.

Preventing osteoporosis is a laudable aim, but the added nonfat dry milk, the extra cheese, and the tofu in these recipes won't tempt many people's taste buds. Each recipe lists calories, calcium, fat, cholesterol, carbohydrates, and protein per serving, but too many of the recipes rely on such things as carob powder and crystalline fructose. This is not for cooks who have difficulty combining red cabbage and dried figs, or tofu and ricotta peanut butter. The inspired high-calcium book is yet to be written. In The High-Calcium Low-Calorie Cookbook, Betty Marks showcases 250 recipes, each of which is especially relevant for women having to deal with the calcium deficit condition of osteoporosis (bone density loss). A diet of calcium-rich foods combined with a regular exercise program can not only slow bone loss, it can help female posture and skeletal integrity to remain straight and strong. These easy, natural, calcium rich recipes range from Tricolor Yogurt Loaf; Oriental Snow Pea Soup; Scallop and Oyster Salad; Lady Rainbow Okra; and Swiss Potato Torte; to Blue Cheese Dressing; Ricotta Peanut Butter; Cheddar Bread; Banana Berry Rice Pudding; Almond Carob Milk Shake. This is a very well written recipe book, especially if you live in the United States, where I'm sure that you could purchase all of the items listed. However, you need to have your wits about you if you live in Australia, as we either have different names for things, or they simply are not available over here. However, it is a very good guide.
