Not a diet cookbook per se, this collection of 150 recipes has been developed to boost individual energy and endurance, along with good health, whether the goal is sports training or work related. Nutritionists Kleiner and Friedman-Kester outline current scientific knowledge about foodstuffs and bodies, then analyze kitchen pantries, fat substitutes, and food safety. What's left is the dishes, all calibrated to generate energy within a balanced meal plan (nutritional analyses here are usually figured either for two or three servings). Experienced cooks will find the offerings a bit bland and uninspired; others might adapt a few of the quick-fix recipes to accommodate hectic schedules. Barbara Jacobs
