Hi-- have a look at our website entry on high-altitude adjustments with our method at Humidity changes shouldn't be much of a problem, but if you're finding your loaves are drying out during the rest time (in low-humidity conditions), cover them loosely with plastic wrap.

Has anyone tried the recipes in this book with a Kitchenaide steam assist oven? What corrections would I make in the timing and temperatures. Other breads I bake using steam assist automatically adds the steam to make a crisp crust. Also I assume temperatures are not for convection baking? Please help. I just got the book as a gift and am dying to try the recipes.
