This pan works great for making deep dish pizzas.

If you're interested in deep dish styled pizza, or better yet a fried style found in NEPA, then this is one of the best investments you can make.

2nd Update: two months later: I have been using this pan for pretty much EVERYTHING! Cooked fresh chicken breasts with a little seasoning and olive oil and they turned out perfectly, also using it to reheat leftovers. Nothing sticks to this pan. It is seriously so easy to clean. The most I have had to do was rinse it in water, and dry it with a lint free towel and that is depending on how greasy the item is. If it's not greasy I just use the towel. I have never had a pan this functional and easy to use. I plan on buying a couple more for the times we are cooking multiple items.

Update: four days later: I have kept this pan in my toaster oven and use it as my go to pan. I can put pretty much anything in this pan, it cooks evenly, cleans easily. Love it!! I do wish they had a smaller size as well, for when I am making more than one dish.

Original review: I recently purchased a Breville toaster oven locally. Breville BOV800XL Smart Oven 1800-Watt Convection Toaster Oven with Element IQ. Which I absolutely LOVE by the way and is available on Amazon.

That oven came with a flat pizza pan. However, I wanted a deep dish pan, so that if I went crazy on toppings, it wouldn't overflow and get my new oven all messy.

This pan is so wonderful!! I have used it to cook homemade pizza, frozen pizza, seasoned red potatoes, various appetizers, and a family member cooked frozen chicken wings on it. I don't know if it really needed seasoning or not, but I went ahead and did so with vegetable oil. So far nothing has stuck to it. Food cooks great, doesn't burn.

This pan works great for making deep dish pizzas. You obviously can make thinner crust pizzas as well. This pan is very well made and should last for years to come. You season the pan like a cast iron skillet. I heavily olive oil the bottom and the sides and then put my crust inside the pan. The pizza will slide right out when its done baking (I cut my pizza on a cutting board not in the pan). As someone who loves pizza, I'm very happy with my purchase!

For years we have tried to create a home pizza that was even remotely close to our favorite Chicago pizzas! Always we ended up with soggy crusts. So, these pans were a delightful surprise! They are heavy and well constructed! A little olive oil in the pan and a thick layer of cheese on the dough before the sauce, and we have not only a passable crust, but have fooled friends into thinking we ordered direct from a Chicago pizzeria!

I've been working on developing a good Chicago style pizza recipe over the last few years. I have developed a few different crusts, but the one thing I have been lacking is a quality pizza pan. I have used a spring form pan for many years and more recently a baking stone made for pies. Hillside's black pizza pan really made a BIG difference. The outside of the crust came out very crispy, while the inside of the crust was soft and tender. The crust also baked thoroughly, something that is not always easy to accomplish. The result: Perfection!

Although Hillside recommends seasoning the pan before use, it has a very nice and slick surface. After washing thoroughly, I dried it out in the oven at 400°, let it cool and wiped coconut oil on the inside and outside of pan, baked in the oven at 400° for 15 minutes, wiped off oil and cooled, repeating the process three times. This was borrowed from American Metalcraft, who also manufactures pizza pans, the only difference being that I used coconut oil instead of shortening.

If you are doing Chicago style pizza, I recommend preheating your oven temp at 450° for an hour with a baking stone on the bottom rack. I would not recommend cutting the pizza in the pan, I would be afraid of damaging the it. It is a trick to get out and difficult to find a big enough cutting board.

If you're interested in deep dish styled pizza, or better yet a fried style found in NEPA, then this is one of the best investments you can make. Oil, a very water-heavy dough and 15 minutes at 525 degrees will give you a perfectly crispy and chewy pizza.

I cannot imagine a better pizza pan. This pan is much more expensive than similar pans, and it is not so obvious why that is the case until you use it. Seasoning the pan was nothing and there is no need to treat it like cast iron either. Just do what they tell you to do, find a decent crust recipe and go for it. It is a heavy pan and makes a heavy pizza. I don't use one of those gripping tong things, but I could picture some of them failing when it came time to remove a cooked pie in this pan from the oven. And it is Made in the USA.
