Absolutely Amazed How People Rate Quality,
By Sam "Sam" (OKC) - See all my reviews

What in the world is the deal? Does anyone learn anything about the tools they use anymore?
The hardest, sharpest, and longest lasting edge is a knife made of "High Carbon" Steel (that is not Stainless). If you buy the absolute cheapest "stainless steel" knives with plastic handles at the grocery store it won't rust. Why? Because it is a lot cheaper to make Stainless Steel without a High Carbon content. It is also the dullest knife you'll ever buy. For instance, the "high end" Henckels knives advertise "Dishwasher Safe" and then if you pay close attention you will always see a "footnote." That "footnote" says, "Not Recommended." IOW, folks, the knife "is" dishwasher safe, but it will probably rust. Only recently have they been able to increase the carbon in stainless steel to the level that is considered "High Carbon." Only the very high end knives (in the $300 range for this type of set) has Stainless Steel and high carbon with "additives" (molybdenum, nickel and vanadium) that will make it to the hardness of standard high carbon steel and rust (stain-less) compare to stainless steel. It's a compromise and the vast majority of people want a sharp knife that will hold its edge for a long time. If they want "pretty" they probably need to hang it on the wall and never use it. It is so very simple to get rid of the rust stain... just rub some Comet across it a few times and the rust/stain is gone. Unless you want to be like a professional chef that has a towel around his waist, a big part of the purpose is to wipe the blades after each use. Why? Because they own the most expensive of knives and all you have to do is wipe them dry after each use and they will never rust. Someone was going to complain by sending an email to the manufacturer. You know what comes to mind for me? Remember Steve Martin in the movie where he was outraged at dinner and says, "Waiter, there are SNAILS on her plate!" Maybe the biggest problem with this middle range cutlery is that they make the claim of "dishwasher safe" and apparently to many people that means it will not rust. So if you didn't know it... if your knife rusts, you should be happy that you have a good quality of steel instead of the grocery store knives that have the stainless steel packed full of soft chromium. With hardness you get "tempering" or brittleness. The cheap white plastic handled grocery store knives will bend better than any filet knife you've ever have without breaking.

Stainless Steel shouldn't corrode... should it?,

This review is from: Hoffritz 8-Piece Knife Set (Kitchen)
We were really pleased when we first received and used this knife set. Its appearance was very professional, the handles very user friendly, and the edges were VERY sharp. However, after using the set and following the care directions for a few months, it became apparent that something was VERY wrong. The 3 1/4" and 5" blades started to show black spots and then began to corrode. Now the 3 1/4" paring knife blade has so much decay that it can be nearly described as a serrated blade. The manufacturer offers a "limited lifetime warranty" so we will soon see what that means. We are very disappointed with this product at any price!

signature series Hoffritz Knives,

My husband and I received this set as a gift one year ago. I have always been hesitant to purchase knives myself, not being familiar of brands, etc. I use this set everyday of my life and am so thrilled with it. The quality of the product is excellent and I have not sharpened them yet. I am buying it for others in my family for Christmas and would highly recommend it.

Though these knives are made from an excellent quality steel the finish leaves much to be desired. Clearly lasar guided computer grinding is great if the knife blank is perfect, but one side was but the other side had a hollow that only a craftsman could correct, they work adequately, though the handle overlapping the bolster is a bit uncomfortable for a user who rides the blade with his forefinger to keep the knife from turning during use. The second finger would blister with any more than casual use.So in conclusion you get what you pay for, I own and use many different brands of knives, and find the hand finished models as a rule cost more and excede in quality those finished on a computer driven or lasar guided grinder.

Stainless steel? I bought this set 3 months ago and it already has rust spots all over. I just sent an e-mail to their customer service. Let's see what happens...In the meantime: stay away from this product!

These knives look nice and are sturdy, but frankly I found myself sharpening them upon my first use. For the money, I think you can do better.

I am also confused by some of the comments below.I bought a set for my wife 3 months ago and she is VERY pleased with the quality and sharpness of the knives. They are always hand-washed, but I have never seen any hint of rust. After 3 months of nearly daily use, they have only required minimal sharpening. My wife has a brother-in-law who is a professional head chef at an up-scale restaurant, so she has had some exposure to quality cutlery. The set we received is of excellent quality and I know she would recommend them to anyone.

I bought my set at Ross's and it looks like exactly the same knives, only the block arrangement is different. I love these knives. Weight distribution feels right and they are very sharp (have had them 1 month and use them just about everyday). I really looked around before buying these. Truth be told, I probably wouldn't have bought them if I had not seen them first (being an "off" brand name and knowing how picky I am), but I am so glad I did buy them. Hope this helps.

I have never seen a knife that starts to rust when washed 3 times. The directions say to hand wash these, so I did, and after about the third washing of the butcher knife started getting little rust spots on both sides in random places... I'm returning these for a refund and checking out the bettwe selection Amazon has to offer...
