When used on semi-soft and semi-hard cheeses (such as mozzarella or cheddar), the performance of this cheese plane is comparable to similar (and much cheaper) instruments. Don't know what's the matter with this plane. It's nice and sturdy. But it hardly cuts the cheese at all, just wrinkles it up into ugly pleated hunks.

We used to have 3 homes, with 3 kitchens and, naturally, 3 cheese planes. The Hoffritz is the easiest to clean--the stainless stell is virtually impervious to permanent stains--and most resistant to bending in use. That last is the key. The more the plane bends, the harder it is to deliver the kind of slices you want. More decorative planes--particularly with wooden handles--should be avoided. They can't go into the dishwasher, and the the guage of the steel, stainless or not, is always inferior to Hoffritz.

It's a lot better than most wire cheese slicers, which I can never get to work properly. It cuts cleanly, even cheese that most cutters would mash to bits.

As other reviewers indicate, this really shines on harder cheeses that can be difficult to slice with other things. It's not at all suited for softer cheeses. Today I also discovered that it works great on cucumbers to get perfectly even slices for sandwiches or marinated salads. Bonus!

Based on the good reviews for this planer, I happily purchased it to replace the (so I thought) crap-o flimsy planer I had used for years and had just broken the handle off of.

(In actuality, my old planer was a top notch tool comparatively. Thank God I didn't throw away the planer piece!!)

The Hoffritz Stainless Steel Planer is a beauty! I was SO excited when I open the package (which arrived 2 days after I placed the order using the Super Saver!!) This baby had a good weight to it, a comfortable handle and a beautiful finish. The cutting edge was sharp and I was ready to plane some cheese!

Well... I first tried a chunk of Colby-jack and you'd have thought that the cheese was half melted the way it gushed up and around the cutting surface. YUK! I figured that maybe the cheese was not cold enough (OK - I LOVED the way this tool looked and wrongly cast blame on the innocent cheese in an effort to give the Hoffritz more than a fair chance to dazzle me.) I then tried a chunk of sharp cheddar. Pretty much the same as the other attempt - gushy, although not quite as bad. I didn't have any concrete firm cheese to try it out on, so I have to be fair and say that there's a chance that it will perform flawlessly on certain types of cheese.

2 stars, mainly b/c I kept it to dress up my kitchen gadget drawer. To plane cheese, I use the broken off planer part of my old tool.
