I've been using a plantain presser for many years purchased in a Caribbean island. the opening in the center is for cutting smaller pieces of plantains instead of the much larger pieces I'm used to growing up. this however works great if you have no other choice.

When I saw this "tostonera" I was reminded of the work my Mama went through when making the "tostones" that we loved as kids and my Papa's attempts at making her something similar to this item shown to make her job easier. I was surprised at how very well made this is and can't wait to try making "tostones" again without having to go through the mess of using a brown paper bag to smash them!

There are many ways to prepare plantains and this is one of them. The device does what it's supposed to do, but you could probably figure out a way to do it without the device. I inadvertently bought four of them instead of one so I gave them as gifts to friends who'd never tried fried plantains. They love them!
