The book is a good skill builder for the fundemental culinary skills needed to be someone who can really cook, rather than just follow a recipe. If you love to cook or would love to learn "how" to cook, this book is for you. If you are looking for a cookbook full of recipes, this is not for you.

Finally, a well reseached, comprehensive guide to great cooking. The techniques are simple, the recipes are well thought out and easy. I just love this book.

We turn to this book over and over again for tips on how to do anything in the kitchen from trussing a chicken to proper techniques for, well, everything. It is the most used cookbook in our house in the six years we've had it. Perfect cookbook.
