Book Description

So what is cheese exactly? Cheese is a dairy food that comes from the pressing and processing of the fats found in milk. There are hundreds of different kinds of cheeses from around the world, and the way they’re created is through the different types of milk and other ingredients used to make the cheese, as well as the numerous types of processing that these ingredients go through. This results in cheese that tastes different, looks different, and feels different. In fact, there’s a culture around cheese (not the biological kind, the social kind) that is centered on the qualities and tastes of different cheese. It’s kind of like wine tasting but with crazier tastes. To get the ideal cheese taste, cheese connoisseurs suggest keeping cheese in a fridge until ready to serve, at which point you should allow it to warm up to room temperature.

2.0 out of 5 stars Great in Theory, Poorly Executed February 7, 2014

This looked like a great book for someone considering cheese making, but the instructions are actually pretty vague. It did get me interested in the process though, and it's a hobby I'll likely pursue. When I do decide to tackle this project, it will be with the help of a higher quality set of instructions without grammatical and spelling errors.

1.0 out of 5 stars wouldnt have paid for it March 16, 2014

Glad it was free, because I deleted it after I tried 2 recipes.....if authors are serious about writing, they may want to hire an editor or at least find someone to read it before it goes live ... please try proof-reading, correcting grammar and spelling mistakes, at the very least !

2.0 out of 5 stars Good Idea But Needs A Lot Of Work February 18, 2014
Verified Purchase
Since I got this book free for my Kindle, I'll keep my complaints to a minimum. After all, I got what I paid for, so to speak.

The author seems to be operating under the assumption that the reader has a basic knowledge of cheese processing since there is no glossary or definitions list of items used like cheese presses and milk thermometers. Also, there is no information where to find the equipment or ingredients used, such as rennet or cheese cultures. I'm not sure where the author does his/her shopping, but most grocery stores don't stock cheese making supplies. Also, the instructions are not very clear to the novice. How exactly does someone apply 10 pounds of pressure to a cheese press? Does one use a torque wrench or just "wing it"?

My final complaint was the lack of editing. In the recipe for cheddar cheese, it calls for "gallons of cow milk". Really? Could you be a bit more specific.

Like I said, it's a good idea but it's not for the novice. Hopefully the author will do a bit of editing, especially now that the e-book is no longer free.

I'm very happy I have cheese making experience to go with this book. It's nice as an over view. I would not recommend for beginners! A tech cheese making book I feel should have some reference points such as ph levels :)

3.0 out of 5 stars ebook on cheese March 13, 2014

The download format of the book does not permit you to slide from page to page. Pages are blank and it is difficult to native from cheese to cheese. I like the recipes and the history of each cheese. The format is just too frustrating.

This is a good book but it would b for intermediate cook and no one that is a beginner especially with the threat of salmonella. Very good recipes for the frugal cook who loves saving and enjoys cooking.
