Creamy Ham & Potato Soup

30-oz. pkg. frozen diced potatoes
6 c. water
1/3 c. onion, chopped
2 10-3/4 oz. cans cream of chicken soup
8-oz. pkg. pasteurized process cheese spread, cubed
1 c. sour cream
2 c. cooked ham, cubed
salt and pepper to taste

Combine potatoes, water and onion in a large saucepan. Bring to a boil over medium-high heat; reduce heat and stir in soup and cheese. Stir until cheese is melted. Blend in remaining ingredients. Cook and stir until heated through, but do not boil. Serves 6.

I just got this the other day and the recipes are amazing. There is a recipe called Maple Pineapple Ham that sounded so good that I couldn't wait until the fall to make it. That recipe alone makes the book worth it!

Gooseberry Patch used to also have a catalog full of the neat, cozy, warm your heart items as well as these cookbooks. They've since discontinued the store and are now focusing on the cookbooks and boy, what a difference! I LOVE this one! I've make almost all of the main dishes in this book and they've just been incredible. Haven't found a stinker in the bunch yet! I'm going to get the Christmas version of this series as well since this one has been so great. There's also tons of decorating ideas and ways to make your home more festive for Thanksgiving as well. Great, great book, highly, highly recommend!
