After reading the label of my favorite brand of ketchup I was shocked to discover that its main ingredients were water and sugar. Although it contained some tomato paste the ketchup also contain a lot of preservatives and artificial flavors.

I looked for an alternative and I found that and almost all ketchups had water and sugar as the main ingredients. Those that had tomatoes as the key ingredient were costing up to 5 times more than regular ketchup.

This annoyed me and I decided to make my own ketchup at home using real tomatoes, no preservatives and no artificial flavors.

Because I found a lot of recipes online and in my cookbook collection I decided to test them to create a superior ketchup.  After testing and testing, I came up with some great recipes and I realized that other people may want to learn how to prepare tastier and healthier ketchup at home.

This is a great book for people who love ketchup, even if they have never made their own ketchup before. The recipes are very easy to follow and the ingredients are what most people would have in their kitchen. I am especially looking forward to making the plum ketchup when plums are back in season. A nice touch that the author has provided are lots of pictures of how he packages the home made ketchup for gift giving....some great ideas I will use in the future. I would definitely recommend this book.

This a well presented eBook that contains more information than just ketchup recipes.

Before you even reach a recipe it explains why making your own ketchup (tomato sauce for some) is a good way to go - reduced additives and ingredients like salt and sugar. Suggestions are also made about better taste, that it is inexpensive, fresh and easy to do.
Homemade is often a gift that is appreciated by friends and family as well.

There is a good section on the equipment needed and the fact that most households will have all that is necessary anyway.
Next the importance of sterilization is explained together with details on how to achieve this in the home kitchen.
Added to this is a short section on Heat Treatment which further adds to the shelf life of the ketchup once it is bottled.

To round out the introductory sections there are some tips and tricks on how to make a better ketchup as well as some simple conversion information.
There is also a useful link to a site that lets you produce your own labels.

Once the recipe section is reached you have 30 to choose from.
There is a good variety from simple, hot, spicy, low sodium and even a plum version.

Each recipe starts with preparation and cooking times and an image of the finished ketchup.
Ingredients and directions follow with a closing note on the recommended storage method and time for each recipe.

Finally there is an interesting section explaining how and why Dan became involved in cooking.
This adds to the appreciation of this informative recipe eBook.
Certainly a good investment for the purchase price.

The recipes that are in this book are awesome. There is a ton of variety and the author even includes a handy conversion charts for those of us who don't know how much 150g is in cups(One of my biggest headaches with European cookbooks lol). I highly recommend the recipes. I just made two of them, and I can't WAIT to try the rest!


**WORD OF CAUTION** The canning methods in this book aren't the safest. You should NEVER reuse commercial jars for home canning because they are designed to be processed at a MUCH higher temperature than what can be achieved by a home water bath canner. There are a lot of step by step directions involved in canning that are left out - there is nothing about properly packing the jars, how much head-space to leave, an exact time for boiling, and elevation adjustments. These recipes are fantastic, but are best to be eaten fresh, stored in the fridge for a short time, or frozen.

Overall, I LOVE the recipes. If it were JUST the recipes, this would absolutely be a 5 star book but because of the unsafe canning methods, I rate this book a 3.

I eat sugar-free for health reasons. If you are in the same boat, you know how hard it is to find GOOD sugar-free or reduced-sugar condiments. I currently use Heinz reduced-sugar ketchup (Formerly Heinz One Carb), but the last time I bought a bottle they'd kept the price the same but reduced the size drastically. It's now almost 4 ounces smaller than it was when I first started buying it four years ago! FED UP!

I have used several recipes I found online to create decent substitutes, but nothing quite like the tomato-ey sweetness of commercial ketchup. (Sometimes you just want that) Most of the recipes were what I would call 'something we could live with'. There is a "sugar-free" recipe in this book that takes honey, which makes it not sugar free. All the others call for sugar. Below are tips on how to use any recipe in the book and make it sugar free, and still keep the spirit of the recipes intact.

I made several recipes from this book the first day I got it, including the "Sugar Free" one. I have to give kudos to the author for a very concise, well-planned book, that has a lot of information and nice pictures. I liked his creative re-use of the juice jars for his ketchup--teamed with the cute labels, they looked very gourmet and artisan! I appreciate the tips on sterilizing as well; you can never underestimate the importance of sterilizing when making something like ketchup that you plan to keep awhile. THANK YOU for that very crucial chapter!

For longevity, please note that real sugar also acts as a preservative, if you are going to convert recipes to sugar-free, this will affect the long term storage ability of it.

What I found when making the recipes, was that they all worked just as they should.

I don't can. I tried. I hate it. So when I first looked at this book, I was tempted to pass it by since I didn't want long sessions peeling tomatoes, cooking, re-cooking, in the heat ..... you get the picture. I was pleasantly surprised. Author Dan Ionescu includes recipes for me.

Two aspects of some of Ionescu's recipes that appeal to me are short prep time and small quantities. The "Super Easy Ketchup" requires only seven minute prep and zero, yes zero, cooking time. Right up my alley. This recipe and others make 2.5 cups rather than gallons of the red sauce. Easy for me to make up and keep in the frig, then easy to make another batch. There is a recipe for Uncomplicated Ketchup, which as a two minute prep, but 45 minutes of cooking. No making this one at the last minute, which tends to be my style of cooking.

I found myself reading through the cookbook, not something I usually do, to see the many varieties of ketchup that can be made. Asian Ketchup, Ketchup with Apples, Perfect on Burgers Ketchup, plus all the variations of spicy ketchup are included.

The one drawback has more to do with the medium than the book--the inability to print the recipe from my e-reader (Amazon, are you listening?). I know that I can go through various gyrations with loading to my computer app, doing a screen shot, etc. etc. But I'd love to be able just hit the button and air print.

I recommend this book not just for non-cooking people like me, but for the ardent canner also. It also has recipes easy enough for children to use. For your next bar-b-que or family gather, make your own ketchup and surprise everyone.
