This book has detailed instructions how to prepare the recipes, how to cut, what size, which ingredients of the marinade to mix first, and which ones to add later and when. And the way and what temperature to use cooking them. Other ingredients that can be used as substitutes. All the what, when, how, and why. I recommend this highly, especially for those who are new in the realms of cooking, specifically in Chinese cooking; but also for seasoned cooks, who are cooking by trials and errors. I do not have this book, but I am ordering one.
