I fall head over heals in love with a book and I LOVED this 920 page massive 10lb volume as soon as I saw it! It is an exceptional treasure of a book! This should be in every kitchen of those who love and appreciate Louisiana cooking and living!
The book is a very well written history of fishing and fishing culture from antiquity to today with unique facts and hundreds of recipes and absolutely AWESOME photos!
My husband is a Commercial crabber and we live below New Orleans. This book touched my heart on so many levels, as a cook, a fisherman's wife and a resident of one of the most unique areas in this wide world (especially poignant now that the oil-spill has threatened so much)!
I also own The Encyclopedia of Cajun & Creole Cuisine also by John Folse! I say John Folse is a Louisiana nonpareil Chef and cultural archivist! Bon appetit!!!

My husband is a true cajun, but never learned all the tricks of the "how's and why's" of the local food. He loves that he has all the answers to all the great foods he grew up on and can share them with his children and soon grandchildren. If you are looking for a girt for that OLD fisherman in your life this is the book. I promise they have never seen a cook book this large in volume and or with this much great information. Want to cook aligator garr it in here and everything else you could possible emagine,

I love cookbooks by John Folse, the pictures and stories are just priceless, not to mention the recipes. I am from Louisiana and he does Louisiana proud sharing the history and way of life we all live and wouldn't have it any other way. This cookbook takes you on a journey through our wonderful State to experience what Louisiana has to offer through recipes, most are a main stay of our own kitchens. This is one cookbook you will pick up again and again just to read and find something to cook.

My husband and I really enjoy this book. It has a lot of great stories and historical information in it as well as really interesting recipes.

***Warning***
This book weighs more than 10 pounds. Hindsight being 20/20, I wish I had gone to my local B&N to purchase it and hand-carry it home. It arrived to me with damaged corners. (the seller went out of his way to work with me. He was fantastic, but he lost money in the deal since he had to replace the damaged book.)
So, save yourself some heartache, and find this gem at a local bookstore and go buy your copy there!
