About the Author

Dr. Ragone was appointed Director of the Breadfruit Institute in 2003 and has worked at the National Tropical Botanical Garden since 1989. She is an authority on the conservation and use of breadfruit, conducting horticultural and ethnobotanical studies on this important Pacific staple crop for 25 years. Her extensive fieldwork on over 50 islands in Micronesia, Polynesia, and Melanesia enabled the NTBG to establish the world's largest collection of breadfruit at its Kahanu Garden in Hana, Maui. The Breadfruit Institute was created to promote the conservation and use of breadfruit for food and reforestation.

I live in Alaska so it is really hard to get breadfruit. I loved this vegetable fried when I visited Kauai recently, A local
chef made some for me. I ordered this cookbook to learn more about this amazing vegetable and the
recipes look just divine but I am a little sad that there are only FIVE recipes in this book. (yes 5). However, if
I can locate breadfruit, I will try them all and add a great review to this one. If you live in the tropics, the
desserts here are sublime. Breadfruit tastes like potatoes and are delicious for people that are curious. Mahalo~!

Breadfruit is very versatile and this cookbook brings out its various uses. Good info about the food, how to pick and cook them. Not a lot of recipes but it does get you started and gives helpful information.
