About the Author

Rich Landau is a co-owner of Vedge, a modern vegetable restaurant that opened in 2011 to rave reviews from diners and critics alike. Landau has been at the forefront of vegetarian dining since 1994, when he opened his first restaurant. In 2009, he served the first-ever vegan dinner at the James Beard House. He lives in his native Philadelphia.

Kate Jacoby is a co-owner of Vedge, with her husband Rich Landau. Jacoby is Vedge s pastry chef and manages its cocktail and wine program. She lives in her native Philadelphia.

I bought this cook book after my first visit to Horizon's cafe when it was in Willow Grove, PA. The food was so good, I knew I had to have the recipes. I have made several items from it now, and I have yet to be disappointed. Many of the recipes include seitan, so if you aren't a seitan lover, many of the entrees won't be appealing. I've had meat eaters prefer my vegan jerk chicken wings to the real thing!

Well-organized book with incredible vegan recipes. The one detractor is the heavy use of fructose as a sweetener in all the dessert recipes. Even in 2003, people knew this was an unsafe ingredient (and we now know it is the source of major bee die-off). Fortunately, the more recent Horizons cookbook eliminates its use.

Mine is now falling apart I use it so often, I really love this cook book and consider it a star in my cookbook collection.
This cook book not only teaches some techniques, but also gives you the restaurant owner's flavors in recipes for spice blends.
The big early restaurant days favorites are in there, like bbq "ribs" as well as some of my favorite go to recipes such as seitan steak marsala.
The flavors are extremely well build and remind me what made this restaurant find its success.

I have been vegetarian for 18 years, but after my first visit to Horizons in 2008, I gained a new perspective on cooking. My favorites are the sage mustard sauce and seitan, white bean cassoulet, and tofu with avocado sauce. I now grill tofu several times a week and started making my own seitan from vital wheat gluten (much better than the packaged seitan). I use an indoor grill pan on the stove (not the recommended charcoal, but it is such an improvement from the preparation I used in the past. Get this book!

this book is great, and they just came out with a new cookbook called horizons: new vegan cuisine. hopefully they start selling it on amazon so not only the privleged that live near the restaurant can get it!!
