Back in the 1980s, I was a young married woman living in Shaker Heights, Ohio with my then husband who was in a medical residency.  It was COLD.  After all, I was from the South and my blood was thin.  I worked for a patent law firm in downtown Cleveland, and I would ride the "rapid" or public transit train that rolled through my neighborhood each morning for work. But first I had to put on my wool coat, my gloves and my hat tied with a sash to keep the wind from knocking it off, and I had to walk about 4 blocks to the stop, sometimes in the snow and ice.

I didn't mind the walk, but it was freezing!  My reward:  When, I got home from work and it was growing dark, it was nice to know that the casserole that I had made the day before (if I had done my homework and prepared it ahead of time), would be ready to pop in the oven or eat as leftovers.  We didn't have a lot of money back then, so anything with macaroni became a real favorite.  It was filling and tasted hot and yummy with sauce of any kind.  These go a step beyond just survival food.  These are dishes that you could call "comfort food."  Hope you enjoy having them meet at you at the door after a long day at work, wherever in the country or world this finds you.

I remember going to family reunions and not caring much about lunch, but I was gazing and drooling over the 7-layer cakes and chocolate/vanilla frosted cupcakes with chocolate chips on top! I'm a Southern Girl and I come from a long line of famous bakers from scratch. When I was a young Mother and busy beyond imagination, I would grab the quickest, easiest, but yummiest cakes, cupcakes, muffins and chocolate dessert recipes possible! I would bake them up, throw them in my Tupperware containers and march happily off to school to deposit them to the school party or the office get-together, or the family get-together! Voila! This is certainly an interesting group of casserole recipes. My first one to prepare is going to be the Mick Mack Casserole. I am from the South also and I love just about anything that has pinto beans in the recipe. A lot of these casseroles can be for either breakfast or dinner since the ingredients can do double duty. Southerners often have "breakfast type" meals at dinner. When I was growing up, we often had grits, scrambled eggs and salmon patties for dinner, lol. I noticed also that broccoli was missing from the Chicken and Broccoli Casserole with Rice, but I am sure that can be corrected. Overall, I think this is a good cookbook to get you started thinking about "one dish meals" and get your feet wet learning about casseroles.

When I was growing up, my mother cooked a different dinner every if the week, except Friday. Friday night was left-over night, which meant a new and unique casserole dish. Our weekly casserole consisted of the left-overs from all the other dinners we had that week, and that's why I'm a sucker for casseroles. Well - I don't have a refrigerator of left-overs anymore, so I appreciate a great casserole cookbook, which this is. I don't expect them to be healthy - I don't expect all of them to be super quick and easy - I just expect them to be a one-dish wonder and that's what you'll get with this cookbook. I've purchased many of Kristie's books and they're all great fun when you're tired of thinking of something to cook or bake.
