Back in the 1980s, I was a young married woman living in Shaker Heights, Ohio with my then husband who was in a medical residency. It was COLD. After all, I was from the South and my blood was thin. I worked for a patent law firm in downtown Cleveland, and I would ride the "rapid" or public transit train that rolled through my neighborhood each morning for work. But first I had to put on my wool coat, my gloves and my hat tied with a sash to keep the wind from knocking it off, and I had to walk about 4 blocks to the stop, sometimes in the snow and ice.
I didn't mind the walk, but it was freezing! My reward: When, I got home from work and it was growing dark, it was nice to know that the casserole that I had made the day before (if I had done my homework and prepared it ahead of time), would be ready to pop in the oven or eat as leftovers. We didn't have a lot of money back then, so anything with macaroni became a real favorite. It was filling and tasted hot and yummy with sauce of any kind. These go a step beyond just survival food.
