Still a great book!,

I gave this 5 stars because I am still using this book.I purchased this book in the late 80's. I remember how time consuming it was to make it all from scratch but now there is instant wheat gluten flour which cuts out alot of time. With the recipes in this book, the finished prduct really does taste like the "real" meat according to my Non-vegetarian family members. I am still using this book! The poor thing is tattered and torn but still usable. I think the only disadvantage is that it needs to be updated to include the instant gluten flour. But, it is real easy to bypass the making of it from the raw stuff. Recipies include chowders, chicken, sausage (all substitutes) and recipies for regular menus as if you were cooking with "real" meat. Even steak and meatloaf! Again, great book. Great for meat eaters and vegetarians!

What a find! For vegetarians this book is beyond value, it is easily the most thorough book on the preparation of Wheat Gluten (aka Seitan, Wheat Roast) from scratch. Its alot of work, I wont kid you, but the results are first rate. And once youve mastered one or two of your favorite recipes from this book you can easily take the idea and expand it to almost any dish. The recipes offered are pretty wide ranging, but the couple comes from New England so the recipes are fairly Americanized... But they do a cajun recipe thats far and beyond my favorite. But what you will not find are traditional ways to prepare gluten as is done in China or in Chinatown restaurant across the US. That is something that I have not found in print yet. Some vegetarians might also be put off by recipes for Fried Chicken, Yorkshire Pudding, Beef Stroganoff and Oyster Stew. But thats an idea that has become pretty common in American grocery stores these days... what with all the soy chorizo and tofu pups that are available now. But for what it is, this book is fantastic. And I must add... that the sauces are without comparison. These recipes include marinades, broths, and sauces as as you could buy. An all around great book for doing it yourself. Eat your heart out Whole Foods!
