Long ago and far away I found myself a young Army wife living in Germany where nobody made American style pies except Americans and even the big Commissary (a military grocery store) didn't carry the pie crust mix my mother & I had always used at home - or any pie crust mix at all. Since I was feeding a husband and most of his platoon and they all loved pie, I dug out my reliable Joy of Cooking and set about learning to make pie crust from scratch, something I knew was easily done because my own Grandma made pie crust just about every day of her life without so much as taking a measuring cup (she only owned one) out of the drawer. I did just exactly as the book said - used two knives to cut in the butter. What an absolute disaster that pie crust was. Frankly, it bore a tremendous amount of resemblance to sole of combat boot. You could have broken a tooth on the thing. Since Julia never mentions pie crust or even pie and The Joy could do nothing further to enlighten me, I wrote home to Grandma. A month or so later (Ah - for those lovely days before email and cheap long distance!) I finally had her reply: The secret is in the method.

Vicki Wells does a grand job of explaining all the various tricks (well, most of them - I've one or two up my sleeve yet) that will have frustrated pie bakers turning out a great pie crust every time. You'll find an interactive Table of Contents that interfaces correctly with the Kindle Navigation menu too. Surprisingly, Vicki did somehow miss the mark with the link to ceramic pie weights, but ceramic pie weights are hardly necessary.

For years I have had many frustrating "moments" with pastry. I just couldn't seem to get it right so I literally gave up and have been using frozen pastry since. Then I found this pastry guide. I have no excuse now to not produce mouth watering and fresh pastry for my family and friends. This guide gives 2 "secret" ingredients and some great tips that I had never heard of before. It is also like a "troubleshooting" guide, which is what I needed because I know now where I was going wrong. A really hand guide to making pastry.

This is a short but powerful book as you get step by step instructions on how to successfully make a pastry dough (or pie crust). I have to admit that this often intimidates me, but with Vicki's step by step instructions I feel ready and up to the task. I esp. liked her practical tip on how to get the dough into the pan without tearing or getting holes in it. I will definitely remember to use that tip! She also included recipes which were helpful as well.

When I make pastry, it's always been a bit hit and miss.

Today I made it using Vicky Well's recipe and step-by-step instructions, and it was top notch!

I was please to see her alternative to using ceramic beans for baking blind (empty) - to me they're expensive and take up valuable cupboard space in our small kitchen.

Vicky adds two ingredients I hadn't thought of, to good effect. She also gives some handy recipes which look interesting, very tasty variations on some of my favourite pastry dishes.

Definitely a helpful guide!

Making a perfect pastry dough every time is not easy. One thing I found with this pastry dough book was it is pretty close to getting it right all the time. The step by step instructions are spot on and make it easy not to make a mistake. I know we do make mistakes sometimes, as long as you follow the recipe instructions you will get it right 99 % of the time.

It's been several decades since I did any baking but I've become so tired of the over-priced, under-whelming products that are available commercially, that I'm returning to my do-it-yourself roots. How to Make Perfect Pastry Dough has been great step by step guide for me; I'm really delighted with the results of my labors.
