Any who reside in the northern states know huckleberries are exceptional for pies and jams: they are stronger than their blackberry cousins and can be used to spice up pancakes, and even savory dishes. Most huckleberry recipes focus on the sweet, so it's a satisfying note that Alex and Stephanie Hester's HUCKLEBERRY COOKBOOK includes a much wider range of dishes, from Roasted Potatoes with Thyme and Huckleberry to Huckleberry Chicken Salad.
