This is a crushed hot pepper paste it's not for the faint of heart but it will add some real kick to almost everything you cook including anything from breakfast eggs, to lunch sandwiches to dinner sides. It is also a product of the USA which means you can enjoy it without worry.

We like this a lot, using it primarily as a table addition to chicken/vegetable stir fry with rice. It is reminiscent of the hot sauce we've had on restaurant Thai food, and adds some delicious zip. In our case, the dish wouldn't be complete without a dollop or two added at the table. Yum. There seems to be some variation in this product, as an identically labelled jar we had in the past was thicker, darker, and a more intense paste.

For those who want to avoid the sugar content of the famous 'Rooster Sauce', this is a great condiment to try. It is fairly hot (in the scoville sense), so use it sparingly. I've used this on everything from rice to potatoes. Very good.

If you're a fan of vinegary hot sauces - you'll probably love this. If you're like me and can't stand the sour/tang of vinegar - avoid. Even though this is less vinegary than say Sriacha sauce - it''s still too much. Try chili oils instead, they're fantastic.
There are a few things that I love about this particular sauce. First, it is mainly chilies preserved with vinegar and some salt. You get the base and can add any flavors you want like garlic, shallots, etc. Second, this is medium low heat, so you can use it when making meals for guests or family members who may not tolerate super spicy dishes. You can always add heat, but you cannot remove it. Finally, the nutrition profile is excellent.
It's the basic ingredients that I most love because this is more of a base than a sauce. I usually saute garlic and shallots in a little olive oil, then add a handful of nuts like cashews, and continue sauteing with this paste. If I am making this for myself or friends who love spicy food I will also shop some fresh bird's eye peppers to kick up the heat a few notches. The finishing touch is some fresh, chopped cilantro and I have a topping that works with everything from eggs to fish.
Nutritionally this sauce is a dieter's dream come true. A serving is a teaspoon and it has only a nominal calorie count. In fact, it's so nominal that two nutritional databases I checked claimed zero calories. The only value that does register is sodium, which is 110mg per teaspoon. That can add up quickly, so if you have sodium restrictions do that that into account.
Overall, this is a flavorful paste that is a little hotter than a jalapeno, but nowhere near as spicy as a habanero. It makes a great base for sauces (and soups), and even works well as a condiment right out of the jar.
