The recipes are wonderful - some very different and interesting..I like the book very much - however - this book which is "144 pages" in length..is actually 106 pages of recipes...and the remaining pages - are page after page after page of Contributors Biographies, followed by Acknowledgments, Conversions and then the Index.....could have done without the overly lengthy biographies of every chef....each chef already receives a credit at the top of each recipe.

If you're enjoying bacon only as a partner for your breakfast eggs or to build a noontime BLT, take a look at I LOVE BACON. This yummily illustrated cookbook is not only a tribute to those delicious crispy strips but a chronicle of bacon's versatility with over 50 favorite recipes from acclaimed chefs. The variety is amazing and mouth-watering - everything from brunch dishes to entrees to soups to salads to cocktails to desserts, yes desserts!

For instance, Chef Bill McDaniel in New York City offers "Smoked Bacon Tempura with Grilled Corn Salad." Wonderful for lunch or supper this Salad is enlivened with snap peas, onion, and red bell pepper, served with Chipotle Mayonnaise for dipping the Smoked Bacon Tempura. Another plus about this cookbook is that the chefs include a Note, either a bit of advice or a recommendation. In Chef McDaniel's case he makes clear his preference for bacon from North Country Smokehouse in Claremont, New Hampshire (www.ncsmokehouse.com). We second that recommendation - absolutely terrific applewood smoked bacon!

Chef Sandra Stefani in Miami suggests "Spaghetti Carbonara," pasta lovers heaven. The pasta is al dente, as she says, "Cooked through but with a little resistance to the bite," enhanced with crispy pancetta. For those with a sweet tooth Chef Cory Barrett in Cleveland presents "Maple-Bacon Ice Cream."

Before dinner? A Bakon Mary Cocktail. As an Olympic gold Medalist has said, "Life expectancy would grow by leaps and bounds if green vegetables smelled as good as bacon." Yes, while we already have good reason to relish bacon I LOVE BACON gives us 50 reasons more.

My take on the cookbook: I agree 100% that bacon is NOT just for breakfast anymore! This cookbook is bursting at the pork belly with sweet, salty and savory bacon recipes. The photos are mouth-watering! Here is the chapter break down and a few of the recipes that are on our "must try" list.

*Make Your Own Bacon: Joking right? I would have never thought of doing such a thing! Apparently once you make your own bacon you NEVER go back to anything store bought. So if you have access to a Pork Belly this chapter is for you! Tasty recipes include Spicy Braised Bacon and Soy-Ginger Braised Bacon!

*Brunch: I love brunch. It is my favorite meal. I LOVE the recipes for Bakon Mary Cocktail (now that will make any brunch classy), Savory Bacon Bread Pudding AND how about this one pork lovers, Bacon, Asparagus, and Gruyere Quiche. Ok, so real men don't eat quiche, as my husband likes to remind me...WELL then good more for me and my friends! I think momma needs this quiche with a side gallon of Bakon Mary Cocktail. Thank you very much!

*Small Bites: Such a cute name for a chapter. The recipes are not only CUTE but extremely mouth-watering! Must tries in this chapter are the Adulterated Accordion Potatoes, Cocktail BLTs, Kobe Beef and Bacon Sliders and Bacon-wrapped Parmigiano-Stuffed Dates.

*Soups, Salads, and Side: Must try tasty recipes include the Egg Chowder with Bacon and New Potatoes, Grilled Bacon with Cucumber Salad with Chili Caramel Dressing and Bacon-Pineapple Fried Orzo (this recipe is on the menu for next week.)

*Pasta- Of course there just HAS to be a pasta chapter! The ever-so-tasty Spaghetti Carbonara is included with new creations of Bucatini with Amatriciana Sauce, Bacon Mac and Cheese and Pasta with Brussels Sprouts, Cauliflower, Hazelnuts, and Bacon! The best photo in this chapter goes to the Crispy Pork Belly Stir-Fry with Rice Noodles, Green Peppercorns, and Thai Basil (um, yes I'll take a platter!)

*Fish- Fish and bacon? Well since it is Lent you can have your Bacon and your Fish! How about trying Scallops with Dried Cranberries and Bacon and the ever so tasty Halibut with Soy-Ginger Braised Bacon, Bluefish with Corn, Avocado, and Bacon Salad, and Bok Choy with Red Miso Sauce! yum.

*Meat-Yes a specific meat chapter is necessary. Top of the food chain is Tacos Al Pastor, Smoked Bacon Tempura with Grilled Corn Salad and Higado de Res Especial (you figure that one out.)

*Desserts- Duh! Bacon and sweets go together like bread and butter! Must try recipes are the BaCorn (Bacon-Caramel Popcorn with Chile-Spiked Peanuts), Chocolate-Bacon Cupcakes and Pig Candy Ice Cream.

This book contains over 50 bacon recipes from some of Ameica's Favorite Chefs!
