I have perused Vice Cream, but there is simply no comparison. This "cookbook" is easily filled with three times the information and a plethora of versatile recipes that go well beyond dairy-free ice cream alone. There are also tons of dessert sauce and baked goodie recipes (cookies, graham crackers, etc.) to accompany a cool scoop, all of which are dairy-free AND gluten-free. There are even Ice Dream cakes and pies (including several pie crust recipes) for those of us who happen to miss the cool and creamy stuff in every form.

Also, the author doesn't just throw some "ice cream" recipes at you and shout GO. There are three entire chapters dedicated to introducing the reader to ingredients, equipment, and techniques. These chapters are so incredibly thorough with tips, explanations, and checklists, that I couldn't even begin to summarize them!

To note, the Ice Dream Cookbook also focuses on low glycemic, using a combination of agave nectar and stevia in most of the "ice cream" recipes. As best as I can tell, this is also a soy-free cookbook; the "ice creams" are primarily coconut milk or nut-based. All of the recipes are vegan-friendly, but I would like to note that there are choices given, such as honey or agave and gelatin or agar agar.

Living with numerous dietary restrictions is hard. I asked for and received an ice cream maker for Christmas last year with the goal of creating my own allergy friendly dessert. My first attempts were OK, but seemed really thin and watery with not a lot of good texture or flavor. My husband surprised me by purchasing the Ice Dream cook book for me as a gift. I cannot tell you how much we both have enjoyed the recipes. I am lactose intolerant and cannot have sugar either. I had tried to make other ice creams using dairy alternatives, but none, I repeat , none come even close to this! Every recipe we have tried is awesome. The base of these recipes uses coconut milk. If you are not a fan of coconut, don't let this scare you. My husband hates coconut and absolutely loves everything we have made out of this book. Having a restricted diet, it is hard to entertain at times because I either have to fix 2 separate meals or short change my guests on flavor. In my house this is never true with dessert. Everyone loves ice cream and this ice cream is outstanding whether you have food restrictions or not. I had some friends over just the other day and after trying the strawberry ice dream they went home and purchased an ice cream maker and the Ice Dream cook book, and no one in their family is lactose intolerant! My father-in-law is a diabetic and truly enjoys the ice cream treats I make for him when he comes to visit. Even if you have no problems with dairy these recipes are so much healthier than what you will find in the supermarket. The recipes are simple and the ingredients are easy to find. The end result is a super creamy custard-like ice cream. I highly recommend this book! Kudos to Chef Rachel!

This book is utterly amazing. Solves the problem of homemade ice cream getting too hard to eat when re-frozen. Amazing recipes. Techniques and sound concepts galore. Like many people, I am lactose intolerant and I do not eat sugar (don't ask). I am also allergic to soy. To be blunt, after my change of life, I simply had to have a way to cool off from the inside out. But it was impossible to find ice cream to buy that was dairy free, sugar free, and soy free. So, I decided I had to make my own. After researching recipes here and there, I stumbled across this wonderful masterpiece book which literally solved all my problems. I just omit the agave/honey in the recipes and use the minimal amount of the "good" stevia recommended and oh is it delightful.

I found this book for a normal reasonable price direct from the author on her site from Planetary Press.

There are so many creative ideas here to build from. I am having so much fun with this. I even bought a small freezer for my NYC apartment just so I can freeze the bowl for the ice cream maker attachment to my mixer and to keep various flavors around. This stuff is so much better than I remember regular ice cream ever tasting. The texture is amazing and the flavors fantastic. When I come up for air, I plan to try her other cookbooks. Maybe when it starts snowing?
