got this for my husband for christmas. he's an avid chef & really into making his own pasta. his one request was the imperia pasta machine so that he could roll out perfectly thin sheets to make all his various pastas! thank goodness i found this one because i had read other reviews talking about non-original imperia machines...and i almost bought them. don't know how they perform, but he is absolutely in love with this one. it stays on our counter...never put away.

Unit arrived boxed well.

First impressions:

Heavy. Not washable since it is not actually stainless steel. Have to brush it off and put it away, so keep it away from any water, eggs, oil, etc.

Handle fit nicely into the roller and the wide-noodle cutter, but refused to fit into the narrow-noodle cutter. Had to use the bench grinder to remove a bubble in the metal of the handle that was preventing it from sliding into the hole. Sorry, but at least make sure the handle fits before shipping it out. Poor quality control there.

Opened the side covers to take a peek at the internals. No bearings/bushings. Shafts ride directly on the stamped metal frame. Not impressed with the quality of engineering on something that costs this much. No adjustability on setting cutting blades in relation to each other.

Usage:

Rolls pasta into sheets well. Progressivly smaller gap until the thinnest resulted in a nearly translucent sheet of noodle that was delicate but manageable. No complaints there.

Cutters were another story. Have done two batches of pasta, one by hand with half semonila and half AP flour, one in a mixer with a dough hook using all semolina. Both times, the noodles on either cutter never seperated once exiting the cutter. I had to pull individual stands apart by hand. Using thicker/thinner dough did not help. Flouring the cutters did not help. Some noodles on one side of the unit cut completely about half of the time, while some noodles on the handle side of the unit almost never cut through. This tells me the two rollers are not parallel. With no way to adjust, there is no way to remedy the situation. By this point, I had already thrown the box away, so hopes of return are shot. I doubt any others of this brand will be any better considering the lack of quality control. Sorry, "hit or miss" is not a shopping strategy.

The clamp is solid and works well enough. A longer top hook on the clamp would mean it would apply pressure in the center of the unit instead of the outer edge which has the tendancy to make the side of the machine away from the clamp bounce a bit.

The little tray/ramp that comes with the machine is useless. It will stay put under the cutters until you actually start using it, when the slight movement of the unit wiggles the tray free from the tiny groove it is supposed to hang on to. After 5 tries, I just tossed it aside. Yet another situation where they could improve the design by making a small simple improvement.

I would not buy this again. 50+ years to perfect this machine, you'd think they would resolve the little issues by now.

Homemade pasta is absolutely delicious. However this machine has a few things that have caused me to look for another one, maybe the Kitchen Aid attachment? I have had this machine about 3 years and yet it still deposits black grease onto the edges of my dough everytime I use it. The first time I used the machine I made a batch of dough and put it through many, many times as the manuel suggests to get rid of the strong smelling black grease that comes off the edges of the rollers onto your dough, however it has never stopped emitting grease. I have done absolutely everything to get rid of it, I have cleaned right down the edges with paper towels, I gave up one Saturday to put dough through the machine hundreds of times in an effort to get rid of the problem to no avail. Also the clamp doesn't really secure the machine to the bench very well so you are continually re-clamping it and the handle comes out constantly which is just annoying. I will be replacing this with an electric, easily secured model as I just love the taste of fresh pasta and have convinced myself I will use it enough to justify the expense. I just wish I had gone straight for an electric machine in the first place and saved the money I spent on this inferior machine.
