Product Description

Also, known as a proofing cloth, a baker's couche provides a bed for your loaves to rest in as they rise. Nestled in the folds of the floured linen cloth, your baguettes will hold their shape as they rise.

After they have risen, roll them onto a peel and slide them onto a hot baking stone. You're just minutes away from those the fabulous, crusty, artisan baguettes.

Maintaining your couche is simple: Brush flour off the couche when done. If dough sticks, allow it to dry, then scrape off. There is no need to wash your couche.

Linen is made from 100% natural flax fibers, untreated and unbleached. It's is heavyweight and stands up on it's own. The size gives you a generous amount of linen to work with.

Heavyweight too: 11.75 oz/square yard. A sturdier linen than other similar products.

There's not much you can say about a piece of linen cloth, but for a home artisan bread baker this is an important item to have in the kitchen. It's well made, tight weave, and true to the old linen cloths used in artisan bakeries the edges are unfinished. Read the directions carefully, there's not much to them, but carefully warn your family members to never wash this cloth. Just a brush off and a light shake outside is all it needs.

I had to wash it in the washing machine once, and it frayed like hell. I don't really blame the product, because I knew that it could happen. It's overall a good product that comes as advertised. I do wish that all of the seams were finished, instead of just two sides. That would avoid fraying issues.
